What We’re Cooking

Grilled Lemon Herb Chicken

Here’s a recipe for a delicious spring dinner:
Grilled Lemon Herb Chicken with Roasted Baby Potatoes and Asparagus

Ingredients:

Instructions:

  1. Preheat grill to medium-high heat.
  2. In a bowl, whisk together olive oil, lemon juice, garlic, thyme, rosemary, salt and pepper.
  3. Add chicken to the bowl and coat well with the marinade.
  4. Let chicken marinate for at least 30 minutes.
  5. Wash and dry baby potatoes and asparagus.
  6. Toss baby potatoes with olive oil, salt, and pepper.
  7. Place potatoes on a baking sheet and roast in the oven at 400°F for 25-30 minutes or until tender.
  8. Place chicken on the grill and cook for 6-8 minutes per side or until cooked through.
  9. In the last 5 minutes of grilling the chicken, add asparagus to the grill and cook until tender.
  10. Serve chicken with roasted baby potatoes and grilled asparagus. Enjoy!
