Grilled Lemon Herb Chicken

Here's a recipe for a delicious spring dinner:
Grilled Lemon Herb Chicken with Roasted Baby Potatoes and Asparagus

Preheat grill to medium-high heat.

In a bowl, whisk together olive oil, lemon juice, garlic, thyme, rosemary, salt and pepper.

Add chicken to the bowl and coat well with the marinade.
-
Let chicken marinate for at least 30 minutes.
-
Wash and dry baby potatoes and asparagus.
-
Toss baby potatoes with olive oil, salt, and pepper.
-
Place potatoes on a baking sheet and roast in the oven at 400°F for 25-30 minutes or until tender.

Place chicken on the grill and cook for 6-8 minutes per side or until cooked through.

In the last 5 minutes of grilling the chicken, add asparagus to the grill and cook until tender.

Serve chicken with roasted baby potatoes and grilled asparagus. Enjoy!
